A loyal customer of Idea Salentina, and that will remain the case for a long time. Fantastic raw ingredients (mozzarella & stracciatella) which we use for our Pizzeria ALBA. Thank you Roberto & team. You are fantastic!

The handmade Mozzarella knots "nodini" in various sizes are just outstanding and beyond any comparison to the industrial product you get in regular grocery stores. To be honest I haven't bought industrial mozzarella for eating without anything on the side ever again since I tried Roberto's mozzarella. The smoked version is actually so good I wouldn't even consider to share it with anyone ;-) Besides mozzarella you can get small batch burrata (they are delicious and huge) or you can even get the "Straciatella" which is the delicious filling of the burrata made from finely separated mozarella strings/filaments and I think cream in different versions (plain / chilly / maggia pepper / gorgonzola). I can eat that just with a spoon... In any case make sure to take the mozzarella out of the fridge some time ahead so the flavors are not muted by it being too cold. Oh and you can get ricotta too. The products are sold at the markets in Uster (Fridays) and Winterthur (Saturdays) and even in select shops. Once you've tried the handmade mozzarella, you'll prefer it to the mass-produced kind. The price is a bit higher, but you won't regret it and will be coming back for more. The handcrafted mozzarella balls, "nodini," in various sizes are outstanding and incomparable to the mass-produced mozzarella you can buy in regular supermarkets. To be honest, since trying Roberto's mozzarella, I haven't bought any mass-produced mozzarella to eat on its own (in my opinion, it's only good for pizza or something similar). My favorite is the smoked version, which is so good I wouldn't want to share it with anyone! ;-) Besides mozzarella, you can also buy enormous burrata (almost two complete meals for me), which, due to the even more elaborate handcrafting process, is only produced in small batches. Also on offer is "Straciatella," which is just the filling of the burrata, made from finely shredded mozzarella and, I believe, cream. It comes in several varieties (plain, chili, Maggia pepper, and now also with Gorgonzola), and I could just spoon it all down! :-P They also offer ricotta. No matter which you choose, it's important to take the mozzarella out of the refrigerator in time so the flavor can develop properly and isn't muted by being too cold. Idea Salentina has a market stall/truck in Uster at the weekly market every Friday and in Winterthur at the Obertor on Saturdays. You can find a small list of shops that carry the mozzarella on their website. Once you've tasted such good mozzarella, you'll prefer to go without mozzarella altogether rather than buy mass-produced mozzarella (although that might be acceptable for pizzas). Just the act of tearing the mozzarella into fine shreds and then savoring it bite by bite is pure joy... Artisanal mozzarella may be a little more expensive, but it's more than worth the price! What's more, it's made in Kempttal, and the milk comes from local farmers. All in all: A wonderful product that I wouldn't want to be without, and it's made by a very likeable owner/founder.
